- 1 tablespoon olive oil
- 4 boneless, skinless chicken breasts, sliced
- 1 small onion, sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
- 2 mangos, peeled and sliced
- 1 teaspoon ground ginger
- 2 tablespoons low sodium chicken stock
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon pulp-free orange juice
- 2 tablespoons cornstarch
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
Heat the oil over medium heat in a pan. Add the chicken and saute for 4 minutes. Remove chicken from the pan and add the onion. Cook until translucent, then add peppers. Cook 3 minutes then return the chicken. In a small bowl, whisk together the remaining ingredients and pour over the stir fry.
Cook for 8 minutes, then serve over rice.
